Whole Urad Dosa

Whole Urad(Black Gram) with skin is good for health as it contains fibre. It also adds to taste. Our normal urad daal and rice dosa is common but we came acrossh whole urad and rice dosa at a friends house recently. Here is the recipe to make Whole Urad Dosa.

Parboiled(Kattsambar) Rice - 1 Cup
Raw rice - 2 Cups
Whole Urad daal with skin - 1 cup
Fenugreek seeds - 1 tsp
Salt - To taste
Green chillies - 2 minced(Optional)
Ginger - 1" piece minced(Optional)
Ghee or oil - QS

Wash the rice and urad well, drain and soak together with fenugreek in sufficient water for 2-3 hours.
Drain and grind with little water to a smooth thick batter. Allow to ferment overnight.
Add salt to taste and optionally add minced green chilles and ginger. Mix well.

Heat ghee/oil on a dosa tawa and pour a ladleful of the batter.
Spread evenly and make thick dosas covered with a dome lid and then roasting on both sides.
Serve with chutney or pickle of your choice.
