Crispy Fried Cauliflower by Anuradha Mudalagiri Kamath

We make cauliflower bajji/fritters at home by dipping them in a besan batter and deep frying them in hot oil. Such bajjis don't turn out crispy or become soggy soon.

I have found a way to make Crispy Fried Cauliflower which will definitely tease your taste buds during this cold month. Since I like the flavour of cauliflower as it is, I have not used any other spice. You may add hing or coriander powder if you like.

Cauliflower(Cut into small florets) - 2 Cups
Salt - To taste
Red chilli powder - 2 Tsp
Besan(Gram flour) - 1 Cup
Coriander powder - 1 Tsp(Optional)
Hing powder - 1/4 Tsp(Optional)
Oil - For deep frying

Wash and drain cauliflower florets.
Apply salt and keep for 15 mins

Squeeze to remove excess water content.
Apply red chilli powder and besan.(Adjust the quantity of these two according to your liking)
(Optionally add hing or coriander powder)
Deep fry in hot oil till crisp.
