Cushion Omelette and Cocktail Omelette Balls

Street food like simple Egg Omelette can be prepared with better ideas and a thick fluffy omelette tastes too good with fresh bread slices and a cup of hot tea. My innovation has Cocktail Omelette Balls(Omelette aappo) That is not so difficult to make. For this, you need little patience, skill and imagination. Cocktail Omelette Balls go well with drinks and a quick snack idea when guests appear suddenly!

Cushion Omelette on Bread
Ingredients:

Eggs – 4
Salt – To taste
Pepper powder – ½ Tsp
Onion – 2 small, chopped
Green chilly – 1 finely chopped
Coriander leaves – A handful chopped
Refined vegetable oil – 2-3 teaspoons

Method:
Collect only egg white in a mixing bowl and keep the yolks aside.
Beat the egg white with a egg beater till it is foamy and light. Now add the yolks and beat again. Once the yellow gets integrated with white of eggs, add salt to taste, the chopped onions, green chillies and the coriander leaves and just fold them in the beaten egg, taking care not to mix too vigorously.

Cushion Omlette
For the Cushion Omlette:
Heat a nonstick shallow pan.
Apply few drops of oil. Pour a ladleful of the egg mixture and allow that to spread without using the ladle.
Pour a little oil around the omelette. Let it roast well.
Sprinkle pepper powder and then turn it upside down.
Roast till golden. Serve with fresh bread and butter.

You can make 4 fluffy cushion omelettes.

Appo Pan
For the Cocktail Omelette Balls:
For this you need a nonstick Aappo pan or a muffin pan that has semi spherical holes or depressions in it.
Heat Aappo pan.
Put a drop of oil in each hole.
Pour a small ladleful of egg mixture in each hole.
Drizzle little oil in all the depressions from the edge.
Sprinkle pepper powder and use a spoon to lift each omelette ball and turn them upside down in their respective holes.
Allow them to get a golden colour and then transfer them to the serving plate and serve hot.

You can make around 27 omelette balls.
