Garlic Toast with Hot and Sour Noodle Soup

When you run out of ideas about how to appease your kids on a cold winter evening, here is a simple and easy combo meal that all the family members like. You may add choice of vegetables like beans, carrot, cabbage, capsicum, mushroom and also add boiled shredded chicken to suit your taste.

A sure winner for the biting cold Winter, a whole meal by itself. Meena has her personal touch in this combo stuff!

Ingredients for the Soup:
Boiled egg or veg Chinese Noodles - 1 cup
Chicken or vegetable stock(We used two Maggi cubes for one liter water) - 1 liter
Red Chilli paste - 1 Tsp or more if you like(Soak Red long chillies in water for 1 hour and grind to a paste)
White pepper powder - 1 Tsp
Salt - To taste
Onion - 1 sliced(Optional)
Cabbage or Bok Choy - A handful, shredded
Variety of veggies like 4 French beans shredded, 4 Mushrooms sliced, 1 small piece carrot shredded, 1/2 cup assorted Shredded Bell peppers(Choose and combine)
Boiled shredded Chicken or cooked prawns - 1/2 cup(Optional)
Dark Soy Sauce - 1 Tsp
Corn Starch - 1 Tbsp dissolved in 1/2 cup water to make a paste
Diluted Vinegar - 1 Tbsp
Chopped Parsley, Cilantro or Onion shoot - i handful
Refined vegetable oil - 2 Tsp

Method:
Heat oil in a saucepan. Stir fry onions and veggies on high flame.
Add the cooked chicken or prawns and fry.
Add salt and pepper, followed by dark soy sauce and red chilli paste.
Stir fry well and add the stock.
Bring to a boil and simmer.
Now add the corn starch paste, stir well and allow the soup to thicken.
At this point, add boiled noodles and vinegar, switch off the flame.
Garnish with chopped parsley, cilantro or Onion shoot.

Ingredients for the Garlic Toast :
White Bread slices - 12
Garlic paste - 1 Tsp
Fresh butter - 1 Tbsp
Oregano - 1/2 Tsp(Optional)
Salt and pepper

Method:

Combine garlic paste with butter, salt and pepper.
Lightly coat the bread slices with this mixture.
Sprinkle oregano and toast the slices of bread on a non stick pan or in an oven till well toasted.

Serve the soup with Garlic Toast. You may also add Tomato Ketchup or Red Chilli Sauce to the soup while consuming according to your taste.
