Roasted Phova(Bhaajjilo Phovu)

During our younger days,  when chilled weather called for a quick chatpata snack, mother used to make this savoury snack roasted phova within minutes and we used to relish it mixed well with freshly grated coconut. This snack has no parallel and the packed phova based mixture can not make one as addicted as to this one.

We used to get freshly beaten phova from a house near Central Warehouse Mannagudda. These days phova is made in mills and the this as well as the nylon variety can be used to make roasted phova. This is well savoured during rainy days or cold winter months.


Ingredients:
Beaten Rice or Phova(Thin variety) - 250Gms
Oil - 1 Tablespoon
Mustard Seeds - 1 Teaspoon
Cumin Seeds - 1 Teaspoon
Red Chillies - 4-6 Broken
Curry leaves - A handful chopped
Turmeric powder - A pinch(Optional)
Salt - To taste
Sugar - 1 Teaspoon(Optional)
Freshly grated Coconut - 1 Cup or more

Method:
Heat oil in a thick bottomed pan/kadai.
Add mustard seeds and fry till they splutter.
Add cumin seeds and fry till they turn golden.
Add the broken red chillies and curry leaves. Fry till crisp.
Now add the phova and salt to taste. Roast well till crisp and aromatic.
Optionally add turmeric powder while roasting.
Allow to cool and add sugar if required. I prefer this snack without added turmeric powder or sugar but, with lots of broken red chillies!

Serve with freshly grated coconut on top.
