Sausage Fried Rice with Omelette Strips

This is Chinese fried rice with a difference. Easier to prepare and very tasty as well. A good meal for the winter months. The use of sausages and egg omelette strips adds a unique taste to this dish. Essentially, serve this with Tomato Ketchup and Schezuan Sauce.
Ingredients:
Aromatic short grain Rice(Preferably Jeera Rice) - 200Gms
Chicken or Pork Sausages - 3 chopped
Eggs - 2
Onion - 1 chopped
Capsicum - 1 small chopped
Onion Shoot - 2 stalks chopped.
Dark Soy Sauce - 1 Tsp
Salt and White pepper powder - To taste
Diluted white vinegar - 1-2 Tsp
Refined Oil - 2 Tsp
Chicken stock - About 100Ml(1 Maggi Chicken cube dissolved in 500Ml boiling water)

Method:
Wash and parboil rice. Drain and spread on a platter to cool down for an hour or so.
Beat the eggs and make an omelette, golden fried on both sides. Cut into thin ribbon like strips.
Heat oil in a wok and stir fry chopped onions on high flame till transparent.
Add the chopped sausages and capsicum and stir fry.
Sprinkle salt and pepper to taste, Add dark soy sauce and stir fry.
Now add the rice and keep pouring little chicken stock on the sides of the wok as you stir fry the rice with the other ingredients.
Sprinkle vinegar and mix well.
Add the chopped onion shoot and the omelette strips.
Serve hot with Schezuan Sauce and Tomato Ketchup.
