Prawn Ghee Roast with Kundapur Masala Powder

Prawn Ghee Roast is the most sought after seafood starter or side dish formulated and popularised by Shetty Lunch Home Kundapur and Anupama's in Mangaluru. You can relish this with rotis, neeru dosas, aapam, ghee rice, pulao or just fish curry rice.

I have posted an authentic recipe for making Prawn Ghee Roast with home ground spices. For those who want to cut on time and make restaurant style prawn ghee roast, best way is to acquire Kundapur Masala Powder and make prawn ghee roast using that. 


This Masala Powder is available at Sapna Store in Padubidri in a pack of 500Gms. You can also make Chicken Ghee Roast/masala fried fish/egg with that powder. Kundapur masala powder can also be prepared at home and stored in air tight container in a fridge for months.

Ingredients:
Jumbo Prawns - 700 Gms shelled, deveined, washed and pat dried
Kundapur Masala Powder - 3 Tsp
Kashmiri Chilli Powder - 1 Tsp
Plain Yogurt - 2 Tbsp
Tamarind - Size of chickpea, pulp extracted in 1/2 cup water
Salt - 1/2 Tsp(or to taste)
Brown Onion Paste - 4 Tsp
Garlic Cloves - 6 Chopped(or 1 Tsp garlic paste)
Coconut Oil - 2 Tsp
Ghee - 4 Tsp

Method:
Combine tamarind extract, yogurt, salt and Kundapur masala powder.
Marinate prawns with this masala paste for 15-30 mins.
Heat oil in a shallow pan and fry garlic and then brown onion paste.
Add the marinated prawns with the marinade and stir fry on high flame.
Allow the prawns to cook on medium flame for 5-7 minutes.
The masala starts to dry up and oil leaves the sides, add ghee and sauté for another 3 minutes.
In 10 minutes, prawn ghee roast should be ready.
Serve with choice of salad and lemon wedge.
