Matki Curry

Matki or Moth Beans are small light brown coloured lentils widely used in Indian cooking. Matki curry in North Indian style is very tasty and goes well with ghee rice or with rotis. Here is a healthy recipe of Matki curry with green masala.
Ingredients:
1. Matki - 1 Cup soaked(Preferably sprouted)
2. Green chillies - 4
3. Tomatoes - 2 small
4. Onion - 2 medium
5. Ginger - 1" piece
6. Garlic - 6 flakes
7. Coriander leaves - A handful
8. Potato - 1 peeled and cubed
8. Garam masala powder - 1/2 Tsp
9. Fresh cream - 1 Tbsp
10. Refined Oil or Ghee - 2 Tsp

Method:
Grind ingredients 2 to 7 to a smooth paste.
Pressure cook soaked matki for 5 mins.
In a thick bottomed vessel, heat oil. Fry the green masala paste till oil leaves the sides.
Add the potato and fry till slightly cooked.
Add cooked matki with water and salt to taste.
Bring to a boil cover and simmer till potato is cooked and the masala is thick.
Now add the garam masala powder and beaten fresh cream, mix well and serve with rotis, phulkas or ghee rice.

Note: If you want the curry to be more tasty, cook the soaked matki along with the masala on slow fire.
