Cheese Cherry Pineapple Boat

One of the most favourite starter dishes at parties, I first tasted this at Hotel Moti Mahal in the Eighties. The sweet cherry with the sweet and tangy succulent pineapple and the creamy salty sour cheese leave a unique taste in the mouth for quite some time after you relish them! This can be served with cocktails and mocktails.

Our good neighbours, Prabhus introduced this starter at our annual Association get together party and every year they take pains to make this and tastefully decorate an inverted ash gourd with these cheese cherry pineapple sticks.

I found a simpler method of arranging them on a boat. The boat here is in fact the drip tray that comes with Sanjeev Kapoor oven! Instead of Ash Gourd, I used a cucumber skinned and halved lengthwise.


Ingredients:
Creamy Cheese Cubes(Amul or any good brand) - 100 Gms
Pineapple(Fresh or Tinned) - 200 Gms
Fresh Cherry(Or Candy Cherry) - 100 Gns
Strong wooden toothpick - QS
Cucumber - 1 small,  peeled and cut into half lengthwise
Oval Shallow bowl or tray


Method:
Cut the cheese and pineapple into 1/2 inch cubes. Cut the cherry into half.
Arrange the halved cucumber flat surface down on the oval bowl/tray.
Pass one piece of cherry, one cube of cheese and one cube of pineapple through each toothpick and keep them bound together.
Stick these on the upper surface of the cucumber in symmetrical pattern.

Your cheese cherry pineapple boat is ready to enthrall the guests!
